Sweet potato pie is good for breakfast too!
Sweet potatoes are high in fiber, heart healthy, rich in beta-carotene, a great source of manganese and rich in vitamins C and E.
Ingredients:
2 cups cooked mashed sweet potatoes
2 cups brown sugar
1/2 cup olive oil
1/2 cup evaporated milk
3 eggs, beaten
1 teaspoon vanilla
1 1/2 teaspoons cinnamon
chopped pecan
Preparation Method:
Mix olive oil, brown sugar, evaporated milk and potatoes until well blended. Add eggs, vanilla and cinnamon; mix well. Pour into the pie dish. Bake in a 350° oven for approximately 30 minutes. Sprinkle some chopped pecans over the top of the pie. continue to bake for another 30 minutes or until set and golden brown.
